Fluffy Vanilla Waffles

Ingredients

  • 1 egg
  • 120 g milk (or oat milk as a substitute)
  • 4 g baking powder (vanilla flavoured if available)
  • 50 g sugar
  • 1 tsp vanilla paste (or vanilla extract if paste not available)
  • 40 g melted butter, cooled slightly
  • 260 g plain flour, added in three parts (100 g + 100 g + 60 g)

Instructions

  1. 1In a mixing bowl, whisk the egg and milk together until smooth.
  2. 2Add baking powder, sugar, and vanilla paste. Whisk to combine.
  3. 3Stir in the melted butter, making sure it’s not too hot to avoid cooking the egg.
  4. 4Gradually add the flour in three parts (100 g, then 100 g, then the final 60 g), mixing gently until just combined. Do not overmix.
  5. 5Cover the batter and let it rest in the fridge for 2 hours. (If in a hurry, rest for 1 hour in the fridge; avoid the freezer to prevent uneven texture.)
  6. 6Preheat your waffle iron.
  7. 7Pour batter into the waffle iron, cook until golden and crisp.
  8. 8Serve warm with your favourite toppings.
  9. 9Tips: If using oat milk, expect a slightly different texture but still delicious result. Cooling the melted butter before adding it helps keep the batter smooth.
