Pasta e Patate (Zeudi's Version)

Ingredients
- Olive oil
- 1/2 onion (chopped)
- 2 cherry tomatoes (diced)
- Celery leaves (chopped)
- 3 potatoes (peeled and diced)
- Coarse salt
- 3 chunks of Parmesan crust
- 1 small bowl of sliced provola
- 1 plate of mixed pasta
- Several glasses of water
- Grated Parmesan
- Fresh basil (in a glass of water)
Instructions
- 1Pour olive oil into a saucepan.
- 2Add onions and simmer over low heat until browned.
- 3Add tomatoes and celery and stir.
- 4Add 1 glass of water, then the potatoes.
- 5Stir and cook until the potatoes begin to soften.
- 6Add the Parmesan pieces and another glass of water.
- 7Add 1/2 tablespoon of salt.
- 8Stir and cook
- 91 glass of water for the pasta.
- 10Add 1 plate of mixed pasta.
- 11Another glass of water and the basil water.
- 12Cook, stir, cook, stir.
- 13Add the provola and stir until the cheese is melted.
- 14Serve on a plate and garnish with grated Parmesan and fresh basil.
