Pasta e Patate (Zeudi's Version)

Ingredients

  • Olive oil
  • 1/2 onion (chopped)
  • 2 cherry tomatoes (diced)
  • Celery leaves (chopped)
  • 3 potatoes (peeled and diced)
  • Coarse salt
  • 3 chunks of Parmesan crust
  • 1 small bowl of sliced provola
  • 1 plate of mixed pasta
  • Several glasses of water
  • Grated Parmesan
  • Fresh basil (in a glass of water)

Instructions

  1. 1Pour olive oil into a saucepan.
  2. 2Add onions and simmer over low heat until browned.
  3. 3Add tomatoes and celery and stir.
  4. 4Add 1 glass of water, then the potatoes.
  5. 5Stir and cook until the potatoes begin to soften.
  6. 6Add the Parmesan pieces and another glass of water.
  7. 7Add 1/2 tablespoon of salt.
  8. 8Stir and cook
  9. 91 glass of water for the pasta.
  10. 10Add 1 plate of mixed pasta.
  11. 11Another glass of water and the basil water.
  12. 12Cook, stir, cook, stir.
  13. 13Add the provola and stir until the cheese is melted.
  14. 14Serve on a plate and garnish with grated Parmesan and fresh basil.
