Ingredients

  • 600g flour
  • 1 tsp salt
  • 2 tsp yeast (powder)
  • 500g mineral water
  • Olive oil
  • Coarse salt
  • Fine salt

Instructions

  1. 1Add the flour, salt, and yeast to a bowl
  2. 2Mix them together until evenly combined (before adding water)
  3. 3Slowly mix or knead, adding the water, until the dough forms a smooth mass and easily pulls away from the bottom of the bowl
  4. 4Cover with plastic wrap and let rest for 1 hour.
  5. 5Stir the dough slowly.
  6. 6Cover with plastic wrap and let rest for another hour.
  7. 7Carefully fold the dough, place it on a deep baking sheet, spread it out slightly, cover with plastic wrap, and let rest for another hour.
  8. 8Preheat oven to 180°C (top/bottom heat).
  9. 9Poke small holes into the dough with your fingers. Brush generously with olive oil. Sprinkle with coarse salt and then fine salt.
  10. 10Place the whole thing in the oven for 25 minutes.
