Focaccia

Ingredients
- 600g flour
- 1 tsp salt
- 2 tsp yeast (powder)
- 500g mineral water
- Olive oil
- Coarse salt
- Fine salt
Instructions
- 1Add the flour, salt, and yeast to a bowl
- 2Mix them together until evenly combined (before adding water)
- 3Slowly mix or knead, adding the water, until the dough forms a smooth mass and easily pulls away from the bottom of the bowl
- 4Cover with plastic wrap and let rest for 1 hour.
- 5Stir the dough slowly.
- 6Cover with plastic wrap and let rest for another hour.
- 7Carefully fold the dough, place it on a deep baking sheet, spread it out slightly, cover with plastic wrap, and let rest for another hour.
- 8Preheat oven to 180°C (top/bottom heat).
- 9Poke small holes into the dough with your fingers. Brush generously with olive oil. Sprinkle with coarse salt and then fine salt.
- 10Place the whole thing in the oven for 25 minutes.
